The custom fields are mainly used for unique data like reference numbers or IDs to help you link to other systems. They are simple text fields and accept any value typed.
Since the introduction of unlimited Form Fields in an event, these should be considered as a better alternative to the older Custom Fields.
Items such as client names, project numbers, job type, action taken etc should all be added as Resources then tagged in your events. Resources give you many more options for speed of data entry, picking from lists, automation, reporting, and filtering. Then form fields can be used for other data.
